　　始于明代，原产大良金榜村。为雪白圆状薄片的咸乳酪，以水牛奶制成,味略咸而甘甜可口，正气补身，有坠 火功效，可佐粥下饭。现除大良镇内的数十家店铺制作经营外，香港、澳门、新加坡、马来西亚等华侨制作商户， 亦以“金榜牛乳”标名以广招徕。

3大良嘣砂
　　大良嘣砂：为面粉拌和猪油、南乳、白糖等配料而成的食品，形似金黄色蝴蝶，顺德俗称蝴蝶为“嘣砂”，故 名。始创于清乾隆年间县城东门外的“成记”老铺，初为脆硬薄片；后来“李禧记”改进，风味甘香酥化，咸甜适 度，品种有蚝油、虾蓉、榄仁、南乳等。现时制作的多为南乳嘣砂。大良�砂、盲公饼、西樵大饼一起可称三大佛 山“手信”特产。
4凤城鱼皮角
　　始制于清代，此鱼皮并非鱼外表的那一层皮，而是用鱼肉经加工制成比纸还薄的皮，（鲜鲮肉刮青加入精面粉 搓匀擀薄作皮）包上馅料就是鱼皮角了。只要稍加想象，就知道制作工艺有多难。顺德这一特产在广州的知名度远 远在佛山之上，这一特产也充分反映顺德人食不厌精的豹斑。

5伦教糕
　　始制于明代伦教镇石桥头一家梁姓的粥品店。糕体色泽雪白晶莹，横竖小眼相连，均匀有序，质地爽软滑润而 有弹性，食味清甜透凉,不易断裂，食味清甜透凉，齿颊留香。至今风行海内外。
用料:上等大米、白糖、蛋白等。
　　制法:把大米细磨成浆，装进布袋隔去水分，然后把适量砂糖以清水煮成糖浆，加人蛋白。滤去杂质，回锅煮 沸，然后倒入干米浆内，拌匀，待冷却后，加人糕种(发酵粉)，盖好并放置10小时，上蒸笼以中火蒸30分钟 即可。

6南乳花生

顺德乃著名塘鱼产区，用塘鱼制作各种风味食品已有数百年历史， 均安鱼饼可算是该类食品之代表作。鱼饼的制作：挑选鲜活鲮鱼，去鳞、内脏和骨头成肉片后剁成 肉泥，加上食盐、蜜糖 及少许生粉挞成白里透青的肉胶(俗称鱼青)，再压成圆饼状，用纯正花生油炸即成。鱼饼色泽金黄 ，具有香、滑、爽、嫩、鲜的特色，是下酒下饭之佳肴，令人“食过番(再)寻味”。

　　有人说，来顺德不吃鱼，等于没到过顺德；而凡在顺德吃过鱼的人，都难忘顺德鱼生的滋味。
　　这些用于做鱼生的鱼有大讲究。据介绍，经验丰富的顺德厨师一般挑重约750克的“壮鱼”，鲜美嫩滑，恰 到好处。鱼买回来，先放在山泉水饿养“瘦身”几天，消耗体内脂肪，做出来的鱼由此肉实甘爽。而杀鱼时，在鱼 下颌处和尾部各割一刀后放回水中，鱼在游动时鲜血流尽，了无淤血的鱼片便洁白如雪。
　　鱼生非常讲究“品相”，鱼肉要透明才靓，要做到透明放血很重要，这正是“技术含量”所在。把握不好，鱼 肉带红色水分也多。而且一般鱼生在片好之后，要再放进冰箱冷冻一阵，才爽滑和有甜味。
　　盛鱼生的专用盘是中空的，填以冰块降温。用筷子夹起一块鱼生，果然呈现半透明状，且看不到 一丝红色。
　　顺德鱼生，不同于普通的日式刺身，它充分体现了中国饮食文化的丰富深远。光是调料就需要十几种，蒜片、 姜丝、葱丝、洋葱丝、椒丝、豉油、花生碎、芝麻、指天椒、香芋丝、炸粉丝，再加上油、盐、糖，缺一不可，将 这些调料混合在一起，把生鱼片拌入其中，入口滑嫩，满口溢香。除了生吃鱼片外，鱼头尾可以清蒸或豉汁蒸，鱼 皮白灼或凉拌，鱼骨则可以煲粥或椒盐，吃法多变，真的可以让你忘了时间，而沉浸于美味的享受之 中。

鲮鱼是广东特有的一种淡水鱼，其肉质鲜美，但刺较多，师傅将鱼肉与骨刺剥离后，再加入极细碎的马蹄和北菇及 一点陈皮，与精淀粉一起搅拌，然后重新装入鱼皮内，其外形与真鱼完全一样，放入油锅内炸至九成熟，再以细干 葱、蒜蓉、柱候酱调成汁炖至全熟，最后勾芡淋在鱼上而成。此菜名为“家乡煎酿鲮鱼”，其入口不仅味道鲜美而 且肉质密实，没有鱼刺，嚼到马蹄和北菇时既清淡又爽口,skechers shape ups。

　　鱼腐：为本市乐从镇的传统名菜，当地人摆酒设宴多以鱼腐饷客。用鱼腐制作的“冬菇蚝油扒鱼腐”、“上汤 韭黄鱼腐窝”、“生菜胆扒鱼腐”、“火锅鱼腐”等，兜售席上佳馔。特点是色泽金黄，甘香鲜美。
